Coconut Macaron Thai Iced Tea

If you love Thai food and drinks, you’re going to fall for this one. My Coconut Macaron Thai Iced Tea is one of my all-time favorite beverages—creamy, flavorful, and perfect for cooling down after a spicy Thai meal.

This drink isn’t just about flavor—it’s about balance. If you’re going all-in with a fiery Thai dish, water won’t save you. Dairy (or dairy alternatives) is your best friend, and in this recipe, I use coconut almond milk and coconut cream for richness and creaminess without any cow’s milk. You can also swap in regular milk if you prefer—the taste is delicious either way.

To take this Thai iced tea up a notch, I use macaron tea, adding a subtle, layered flavor that makes this drink far from ordinary.

Ingredients (Serves 6)

  • 10 tea bags
  • 8 cups water
  • 1 1/2 cups granulated sugar (adjust to taste)
  • Coconut almond milk
  • Coconut cream
  • Ice
  • Mint leaves for garnish
  • Straws for serving

Instructions

  1. Bring 8 cups of water to a boil in a large pot. Add the tea bags, remove from heat, cover, and let steep for 8 minutes.
  2. Remove the tea bags and stir in the sugar until fully dissolved.
  3. Transfer the tea to a pitcher and refrigerate until chilled.
  4. To serve, fill glasses halfway with ice, pour in the chilled tea until about 3/4 full, then add a splash of coconut almond milk.
  5. Top each glass with 2 tablespoons of coconut cream, stir well with a bamboo skewer, and garnish with mint.
  6. Sip through a straw, starting from the bottom of the glass to enjoy all the layers of flavor.

Tips & Variations

  • Adjust the sweetness to your taste by adding more or less sugar.
  • Swap in regular milk and cream if you don’t have coconut alternatives.
  • Use fewer tea bags for a milder tea flavor or more for a stronger brew.
  • For an extra tropical twist, serve with a dash of toasted coconut on top.
