Description
These Chocolate Chip Banana Oatmeal Cookies are a healthy, delightful treat you can enjoy anytime—perfect for dessert, a snack, or even breakfast!
Ingredients
- 2 large ripe bananas, mashed (about 3/4 cup)
- 1/2 cup almond butter (or substitute with peanut butter)
- 3 tbsp maple syrup
- 1 tsp vanilla extract
- 2 cups rolled oats (use gluten-free if needed)
- 1/4 tsp salt
- 1/2 tsp cinnamon (optional)
- 1/4 cup chocolate chips
- 1/3 cup chopped walnuts
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mix the mashed bananas, almond butter, maple syrup, and vanilla extract until smooth.
- In another bowl, combine the oats, salt, cinnamon (if using), chocolate chips, and walnuts.
- Pour the wet ingredients into the dry mixture and stir until well-combined.
- Use a cookie scoop to portion the dough onto the baking sheet. Flatten each cookie slightly with your hands.
- Bake for 12-15 minutes, or until the edges are golden brown.
Notes
- Storage: Store cookies in an airtight container at room temperature for up to 2 days, or refrigerate for 5-6 days.
- Ripe Bananas: The riper the bananas, the sweeter the cookies. Bananas with brown spots are ideal for this recipe.
- Oats: Use rolled oats for the best texture. Quick oats tend to be softer and can blend into the cookies.
- Shape: Press each cookie down to flatten slightly, as they won’t spread on their own.
