Baked Apple Pie Enchiladas

These Baked Apple Pie Enchiladas deliver all the warm cinnamon-spiced flavor of apple pie, wrapped snugly in tortillas and topped with a rich caramel sauce!

Ingredients

  • 1 (21 oz) can apple pie filling or homemade apple pie filling
  • 6 (8-inch) flour tortillas
  • 1 tsp ground cinnamon
  • 1/2 cup butter
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1/2 cup water

Instructions

  1. Preheat oven to 350°F and lightly butter a 9 x 13-inch baking dish.
  2. If needed, soften tortillas in the microwave to make rolling easier.
  3. Spoon about 1/4 cup of apple pie filling slightly off-center in each tortilla. Sprinkle with cinnamon.
  4. Roll each tortilla and place seam-side down in the baking dish.
  5. In a saucepan, bring butter, white sugar, brown sugar, and water to a boil. Reduce heat and simmer for 3 minutes, stirring constantly.
  6. Pour the caramel sauce over the enchiladas, sprinkle with extra cinnamon if desired, and let stand for 45 minutes.
  7. Bake in the preheated oven for 20 minutes or until golden brown.
  8. Serve warm with vanilla ice cream or whipped cream and drizzle with additional caramel sauce as desired.
