Ingredients:
- 1 (1.5 lb) bag Baby Boomer Little Potatoes
- 2 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- Salt & pepper, to taste
- 1/2 cup prepared ranch dressing, divided
- 2 cups Mexican Cheese Blend
- 1 cup cooked and crumbled bacon
- 1/2 cup diced green onion
Instructions:
- Prep Potatoes: Cut potatoes into 1-inch cubes. In a bowl, toss with 1/4 cup ranch dressing, salt, and pepper. Place in a greased 9×13-inch baking dish.
- Bake Potatoes: Bake at 450°F, stirring every 10 minutes for 30 minutes.
- Prepare Chicken: While the potatoes bake, season chicken cubes with remaining ranch dressing, salt, and pepper. Place on top of the partially cooked potatoes. Cover with foil and reduce the oven temperature to 400°F. Bake for an additional 20 minutes or until chicken is cooked through.
- Add Toppings: Remove the casserole, take off the foil, and sprinkle cheese, bacon, and green onions on top. Return to the oven for 8-10 minutes, or until the cheese is melted and bubbly.
