Sometimes my daughter asks for a sweet treat, and I love keeping my promise to bake something delicious for tea. These simple 3-Ingredient Cookies are quick to whip up and sure to satisfy any sweet craving!

Ingredients
- 6 oz. (3/4 cup) butter, at room temperature
- 3.5 oz. (1/2 cup) superfine sugar
- 9 oz. (2 1/4 cups) all-purpose flour
- Raw sugar or large-granulated sugar for coating (about 1/2 cup)
Instructions
- Make the Dough: In a mixer, beat the room-temperature butter and superfine sugar together until light and fluffy. Sift the flour into the mixture and knead until a dough forms.
- Shape the Dough: On a flat surface, form the dough into a long rectangular prism with your hands. Roll the dough in a layer of raw sugar, then wrap it in cling film and refrigerate for about an hour.
- Cut and Bake: Preheat your oven to 325°F (165°C). After chilling, cut the dough into squares and place them on a parchment-lined baking sheet. Bake for about 20 minutes, or until lightly golden.
Notes
- Make sure your butter is softened to room temperature for easy whipping. If you’re short on time, you can cut it into pieces and melt slightly in the microwave.
- If you don’t have superfine sugar, you can easily make your own by blending granulated sugar until fine.
- The cookies don’t spread much while baking, so you can place them fairly close together on the baking sheet.
