Cheesy Taco Casserole
Ingredients:
- 1 pound lean ground beef
- 1 can Ranch Style beans
- 1 can Ro-Tel tomatoes
- 1 small onion, chopped
- 1 package taco seasoning
- 1 can cream of chicken soup
- 1/2 cup water
- 1 (10-12 oz) bag of tortilla chips, crushed (use as much as needed)
- 2 cups shredded cheddar cheese, divided
- Sour cream and salsa for topping
Instructions:
- Preheat your oven to 325°F (165°C).
- In a large skillet, cook the ground beef until browned. Drain any excess fat.
- Stir in the beans, Ro-Tel tomatoes, chopped onion, taco seasoning, cream of chicken soup, and water. Let the mixture simmer on medium-low heat until everything is well combined and heated through.
- Grease a 9×13-inch casserole dish. Start by spreading a layer of crushed tortilla chips at the bottom.
- Spoon half of the meat mixture over the chips, followed by half of the shredded cheddar cheese.
- Add another layer of crushed tortilla chips, the remaining meat mixture, and top with the rest of the cheese.
- Cover the casserole with foil and bake for 20-30 minutes or until bubbly and heated through.
- Once baked, let it sit for 5-10 minutes to set.
- Serve with a dollop of sour cream and a side of salsa for extra flavor.
