You might be surprised by this recipe, but today I’m going to teach you how to make Cauliflower Tortillas! Yes, you read that right – tortillas made from cauliflower! These healthy, low-carb tortillas are a great alternative to traditional ones, and they’re easy to whip up at home.

Ingredients:
- ¾ large head of cauliflower (about 2 cups, riced)
- 2 large eggs (use flax eggs for a vegan option)
- ¼ cup chopped fresh cilantro
- ½ medium lime, juiced and zested
- Salt & pepper, to taste
Instructions:
- Preheat your oven to 375℉ and line a baking sheet with parchment paper.
- Trim and chop the cauliflower into small, even pieces. Pulse in a food processor until the texture resembles couscous (about 2 cups packed).
- Microwave the riced cauliflower for 2 minutes, stir, then microwave for another 2 minutes. Alternatively, steam until soft. Once cooked, place the cauliflower in a cheesecloth or thin towel and squeeze out as much liquid as possible.
- In a bowl, whisk the eggs, then add the cauliflower, cilantro, lime juice and zest, salt, and pepper. Mix well.
- Shape the mixture into 6 small tortillas on the prepared baking sheet. Bake for 10 minutes, then flip and bake for another 5-7 minutes until firm.
- Let the tortillas cool slightly on a wire rack. Heat a skillet over medium heat, then brown each tortilla for 1-2 minutes on each side. Enjoy!
