Ingredients:
- 1/4 cup melted butter
- 50 Oreo cookies (two 300g packages), divided
- 1/2 cup white chocolate chips
- 24 oz (3 packages) cream cheese, softened
- 1 1/2 cups powdered sugar
- 1 1/4 cup heavy whipping cream, divided
Instructions:
Crust:
- Crush 25 Oreo cookies from one 300g package in a food processor along with melted butter until the mixture becomes smooth and starts to hold together.
- Press the mixture evenly into the bottom of a 9-inch springform pan, creating a firm base and pressing about 1/2 inch up the sides.
Filling:
- In a medium microwave-safe bowl, combine the white chocolate chips with 1/4 cup of cream. Microwave in 20-second intervals, stirring between each, until melted and smooth. Set aside.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Add in the powdered sugar and melted white chocolate mixture, then continue to beat until fully combined.
- Slowly add the remaining 1 cup of heavy cream, beating on low speed until incorporated, then increase the speed to high and beat until the mixture is thickened and fluffy (3-4 minutes).
- Crush 20 Oreo cookies (reserve 5 for garnish) in a large zip-top bag using a rolling pin, then fold them into the cheesecake mixture.
- Spread the filling evenly into the prepared Oreo crust, cover, and refrigerate for at least 5-6 hours, or preferably overnight, to set.
