- 125 g (4.5 oz / ½ cup) unsalted butter, softened
- ½ cup (120 g) caster sugar (superfine sugar)
- ½ cup (110 g) packed brown sugar
- 2 large eggs
- 1 tsp (5 g) vanilla extract
- ½ cup (50 g) unsweetened cocoa powder
- ½ cup (75 g) plain flour (all-purpose flour)
- ½ tsp (3 g) salt
Instructions
- Preheat Oven: Preheat to 160°C (320°F) for fan/convection or 180°C (355°F) for standard. Grease and line a 20 cm (8 inch) square tin with baking paper, leaving an overhang for easy removal.
- Melt Chocolate: In a small heatproof bowl, microwave the chopped chocolate for 1 minute. Stir, then microwave for another 30 seconds. Stir until smooth. If needed, continue microwaving in 10-second bursts until fully melted. Set aside.
- Cream Butter and Sugars: In a large mixing bowl, whisk together the softened butter, caster sugar, and brown sugar until well combined. Add eggs one at a time, whisking after each addition until pale and creamy. Stir in vanilla extract.
- Combine Ingredients: Add the melted chocolate to the butter-sugar mixture and whisk until smooth. Fold in cocoa powder, flour, and salt until fully combined and the batter is thick.
- Bake: Pour the batter into the prepared tin and spread evenly. Bake for 30-35 minutes, or until the brownies are firm and no longer wobble when moved. Allow to cool in the tin for 30 minutes before transferring to a wire rack to cool completely.
