This 5-layer Cookie Box Brownie Cheesecake is an indulgent dessert that’s sure to satisfy any sweet tooth! With layers of chocolate chip cookies, chocolate sandwich cookies, rich fudge brownies, and creamy cheesecake, it’s a show-stopping treat that tastes as incredible as it looks.

Ingredients (for 8 servings):

  • 16 oz (455 g) chocolate chip cookie dough, room temperature
  • 36 oz (510 g) brownie mix (2 boxes), prepared as per package instructions
  • 24 oz (680 g) cream cheese, softened
  • ½ cup (100 g) sugar
  • 1 tsp vanilla extract
  • 1 large egg
  • 40 double-stuffed chocolate sandwich cookies
  • Whipped cream, for serving

Preparation:

  1. Preheat the oven to 350°F (180°C).
  2. Line a 10-inch (25-cm) springform pan with 2 layers of plastic wrap, leaving excess hanging over the edges.
  3. Press the cookie dough evenly into the bottom of the pan to form a disk, then fold the plastic wrap over the top. Unclasp the pan and freeze the cookie dough disk.
  4. Re-clasp the springform pan, spray the bottom with cooking spray, and pour in the brownie batter.
  5. Spray the bottom and sides of a smaller cake pan (5-inch deep or 8-inch wide), then press it into the brownie batter until the batter reaches halfway up the sides of the springform pan.
  6. Bake for 35 minutes, then let it cool for about 5 minutes.
  7. Reduce the oven temperature to 300°F (150°C).
  8. In a large bowl, mix together the cream cheese, sugar, vanilla, and egg until smooth.
  9. While the brownie is still warm, carefully rotate and press down on the smaller cake pan to push the brownie further up the sides of the springform pan, creating an even ring. Chill for 30 minutes.
  10. Arrange a layer of 14-15 sandwich cookies at the bottom of the brownie shell, placing them as close together as possible.
  11. Pour the cheesecake batter over the cookies, spreading it evenly across the top. Tap the pan to release air bubbles.
  12. Bake for 40 minutes until the cheesecake slightly jiggles in the center, then freeze for 30 minutes until the cheesecake firms up.
  13. Arrange another layer of sandwich cookies on top of the cheesecake, and place the frozen cookie dough disk over the cookies. Tuck in any edges.
  14. Bake for 20 minutes.
  15. Chill the cheesecake completely, then remove from the pan. Slice and serve with whipped cream and an extra cookie on top!
