4-Ingredient Keto Pizza Dough (Fathead Dough)

This easy low-carb pizza dough is better than the real thing—gluten-free, keto-friendly, and ready in minutes! Made with just mozzarella, cream cheese, almond flour, and an egg, it’s perfect for a quick pizza night without the carbs.

Ingredients

  • 1 ½ cups shredded mozzarella cheese (plus extra for topping)
  • 2 tbsp cream cheese
  • ¾ cup almond flour
  • 1 beaten egg
  • Sauce and toppings of your choice

Instructions

  1. Preheat oven: Set to 425°F (220°C).
  2. Melt cheeses: In a large bowl, microwave the mozzarella and cream cheese together for 90 seconds, stirring halfway through until smooth.
  3. Make dough: Stir in almond flour and beaten egg. If the dough feels sticky, add a little more almond flour. Knead with your hands until smooth.
  4. Roll dough: Place dough between two large pieces of parchment paper. Roll into a 10-inch circle, about ⅓ inch thick.
  5. Prepare for baking: Remove the top parchment sheet. Transfer the bottom sheet with dough onto a pizza pan or an inverted baking sheet. Pierce the dough with a fork to prevent bubbles.
  6. Bake crust: Cook for 8–10 minutes until slightly golden.
  7. Add toppings: Remove from oven, add pizza sauce, cheese, and your favorite toppings.
  8. Bake again: Cook for an additional 5–10 minutes until cheese is melted and toppings are hot.
  9. Serve: Slice, enjoy, and savor your low-carb pizza!

Tips

  • Spray or lightly dust parchment paper with non-stick spray, grated Parmesan, or almond flour to prevent sticking.
  • Coconut flour substitution: Use ⅓ cup coconut flour and 1 extra egg. Watch cooking time—it may be slightly less.
