  • 1 lb beef stew meat
  • 2 cups beef broth
  • 1 cup red wine
  • 3 carrots, sliced
  • 2 potatoes, cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper, to taste
  • Bread bowls (optional, for serving)

🍲 Instructions

  1. Brown the Beef
    In a large, heavy-bottomed pot or Dutch oven, heat a drizzle of oil over medium heat. Add the stew meat and brown on all sides for rich flavor.
  2. Sauté the Aromatics
    Add chopped onion and minced garlic. Cook until softened and fragrant, about 3–4 minutes.
  3. Build the Flavor
    Stir in tomato paste, dried thyme, and bay leaf. Cook for another minute to deepen the flavor.
  4. Deglaze with Red Wine
    Pour in the red wine, scraping the bottom of the pot to release all those flavorful browned bits. Let it simmer for 2–3 minutes.
  5. Simmer the Stew
    Add beef broth, sliced carrots, and cubed potatoes. Bring to a boil, then reduce heat to low. Cover and simmer for 1.5 to 2 hours, until the beef is fork-tender and the vegetables are cooked through.
  6. Season to Taste
    Remove the bay leaf. Season with salt and pepper to your liking.
