Tzatziki Chicken Salad: A Fresh Mediterranean Twist on Lunch

Ingredients

For the Tzatziki Sauce:

  • 1 cup + 2 tablespoons plain Greek yogurt
  • ½ cucumber, grated
  • 2 to 3 garlic cloves, pressed
  • 2 tablespoons olive oil
  • 2 tablespoons fresh dill, chopped
  • Salt and pepper to taste

For the Salad:

  • 2 cups cooked chicken, chopped
  • 2 cups romaine lettuce, chopped
  • 1 cup grape tomatoes, halved
  • ½ cup pepperoncini peppers, sliced
  • ½ cup Kalamata olives, sliced
  • ¼ cup red onion, chopped
  • ½ cup feta cheese, crumbled

How to Make It

  1. Make the Tzatziki:
    In a mixing bowl, combine Greek yogurt, grated cucumber, garlic, olive oil, and fresh dill. Season with salt and pepper. Stir until smooth and creamy. Set aside.
  2. Assemble the Salad Base:
    In a large salad bowl, add chopped romaine, tomatoes, pepperoncini, olives, and red onion. Toss gently to combine.
  3. Add Chicken:
    Top the salad mixture with chopped, cooked chicken.
  4. Top with Tzatziki:
    Spoon the homemade tzatziki sauce generously over the salad.
  5. Finish with Feta:
    Sprinkle crumbled feta cheese over everything and serve!
