Twix Cookies – Soft, Chewy, and Totally Irresistible

Imagine a soft, buttery sugar cookie base, topped with creamy caramel, then finished with a smooth layer of milk chocolate.   • 1/2 cup (111g) salted butter, softened
  • 1/2 cup (115g) granulated sugar
  • 1 tsp vanilla extract
  • 1 egg white
  • 1 1/2 cups (228g) all-purpose flour
  • 1 tsp baking powder
  • 20 soft caramels, unwrapped
  • 1 tbsp milk (whole works best)
  • 2 cups (400g) milk chocolate chips

Instructions

  1. Preheat Oven
    Set your oven to 350°F (175°C).
  2. Make the Cookie Dough
    • In a mixing bowl, cream the butter and sugar until light and fluffy.
    • Mix in the egg white and vanilla until well combined.
    • Add the flour and baking powder, stirring until a soft, Play-Doh-like dough forms.
  3. Shape and Bake
    • Roll the dough out to 1/4–1/2 inch thickness.
    • Use a 2 1/2-inch round cookie cutter to cut out circles.
    • Place on an ungreased baking sheet and bake for 6–8 minutes, until puffy and no longer glossy.
    • Transfer cookies to a wire rack to cool completely.
  4. Prepare the Caramel Layer
    • In a microwave-safe bowl, combine caramels and milk.
    • Microwave for 1 minute, stirring halfway, until smooth.
    • Spoon about 1 teaspoon of caramel onto each cooled cookie and spread almost to the edges.
    • Chill cookies in the fridge for 10–15 minutes to set the caramel.
  5. Add the Chocolate
    • Melt the chocolate chips in 30-second intervals, stirring until smooth.
    • Spread a thin layer of chocolate over the cooled caramel.
    • Let the chocolate set at room temperature or refrigerate for faster cooling.

  • Use soft caramels (like Kraft) for easier melting.
  • Don’t overbake—you want a soft, tender cookie base.
  • Work quickly with caramel so it doesn’t harden before spreading.
