  • 1 lb (450 g) pulled rotisserie chicken
  • 3 cups frozen onions and peppers
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup (140 g) frozen fire-roasted corn
  • 8 flour protein tortillas (or regular tortillas)

🧀 Creamy Cheese Sauce

  • 2 cups low-fat cottage cheese
  • 4 oz diced green chiles
  • 1 packet taco seasoning
  • 1–2 tablespoons water (as needed)

🧀 Finishing

  • 2 oz Colby Jack cheese, shredded

👨‍🍳 Instructions

1. Make the cheese sauce

In a blender or food processor:

  • Add cottage cheese, green chiles, and taco seasoning
  • Blend until smooth and creamy
  • Add water if needed to thin the mixture
    ➡️ Set aside

2. Cook the filling

  • Heat a large skillet over medium heat
  • Add frozen onions and peppers
  • Cook for 4–5 minutes until softened

Then add:

  • Shredded chicken
  • Black beans
  • Corn

➡️ Cook for another 2–3 minutes until heated through


3. Combine

  • Remove from heat
  • Stir in the cheese sauce until everything is well coated and creamy

4. Assemble burritos

  • Add a generous portion of filling to each tortilla
  • Roll tightly into burritos

5. Grill

  • Heat a skillet or griddle over medium heat
  • Cook burritos for 30–60 seconds per side
