Ingredients:

  • 12 ounces egg noodles
  • 1 pound Italian sausage
  • 1 ½ cups mixed bell peppers, sliced (use a variety of colors for a vibrant presentation)
  • ¼ cup sliced onion
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon red pepper flakes (adjust to taste)
  • ½ cup white wine
  • 2 tablespoons fresh parsley, chopped
  • 1 can (28 oz) diced tomatoes, with juice
  • Salt and pepper, to taste
  • ½ tablespoon olive oil

Instructions:

  1. Heat olive oil in a large skillet over medium heat. Add the Italian sausage and cook until browned and cooked through. Remove sausage from the pan and set aside.
  2. In the same skillet, sauté the onions, bell peppers, and garlic for about 3 minutes, until softened and fragrant.
  3. Pour in the white wine and simmer until it’s nearly evaporated, intensifying the flavors.
  4. Stir in the diced tomatoes with their juices, Italian seasoning, red pepper flakes, salt, and pepper. Let the sauce simmer for 10 minutes, allowing it to thicken and the flavors to meld.
  5. Return the cooked sausage to the skillet, add the chopped parsley, and cook for another 5 minutes to combine all flavors.
  6. Meanwhile, cook the egg noodles according to package instructions until al dente. Drain well.
  7. Add the drained noodles to the skillet and toss everything together until the noodles are fully coated with the sauce.

Serve immediately and enjoy a fiery, comforting taste of Italy! Adjust the heat by adding more or less red pepper flakes to suit your preference.
