  • 1 tsp vanilla extract
  • 75g (2/3 cup) all-purpose flour
  • 1 tsp baking powder
  • Pinch of salt
  • 80g (1/2 cup) chocolate chips
  • 10–14 Oreo cookies, crushed (plus extra for topping)

Instructions

  1. Prep: Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. Melt Chocolate & Butter: In a microwave-safe bowl or using a double boiler, melt together the chocolate and butter until smooth. Let cool slightly.
  3. Mix Eggs & Sugar: In a large mixing bowl, beat the eggs, granulated sugar, brown sugar, and vanilla extract with an electric mixer for 2–3 minutes, until light and fluffy.
  4. Combine: Add the melted chocolate mixture to the eggs and whisk to combine.
  5. Fold in Dry Ingredients: Gently stir in flour, baking powder, and salt. Then fold in the chocolate chips and crushed Oreo cookies.
  6. Scoop Dough: Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 5 cm (2 inches) apart.
  7. Optional Chill: For thicker cookies, chill the dough on the baking sheet in the freezer for 10 minutes.
  8. Bake: Bake for 12–14 minutes, until edges are set but centers are soft. Optional: Swirl a round cookie cutter around hot cookies for perfect shapes.
  9. Cool: Let the cookies cool completely on the baking sheet before transferring.
