the best Garlic Butter Steak Bites and Potatoes (One-Pan Meal in Under 30 Minutes)

If you love steak but don’t love the fuss, this Garlic Butter Steak Bites and Potatoes recipe is your new weeknight go-to. Juicy, tender steak and crispy golden potatoes cook up in the same skillet with loads of garlic and butter flavor—all in under 30 minutes!

Why You’ll Love This Recipe

Let’s be honest—steak feels like a special occasion food. But with this method, you can enjoy those rich, seared flavors without the hassle. Steak bites cook fast, stay juicy, and pair perfectly with crispy pan-fried potatoes. It’s a one-pan comfort meal the whole family will devour—my kids ask for it regularly!

Ingredients You’ll Need

This recipe keeps it simple with fresh, flavorful ingredients—all naturally gluten-free:

  • Ghee or butter, divided
  • Olive oil
  • Yukon gold potatoes, cut into ½-inch cubes
  • Garlic cloves, minced
  • Dried thyme & oregano
  • Sea salt & black pepper
  • Sirloin steak, cut into ½-inch cubes
  • Fresh parsley, for garnish

Ingredient swaps:

  • Use red, yellow, or fingerling potatoes if you don’t have Yukon gold.
  • Any tender cut of steak works well—try ribeye, strip steak, or tenderloin.
  • Swap herbs to suit your taste—rosemary, basil, or parsley are great options.

How to Make Garlic Butter Steak Bites and Potatoes

Follow these easy steps to make this one-pan wonder:

1. Cook the Potatoes

Heat a large cast iron skillet over medium heat. Add olive oil and 2 tablespoons of ghee. Once melted, add the cubed potatoes. Sprinkle with garlic, thyme, oregano, salt, and pepper.

Let the potatoes cook undisturbed for 2–3 minutes, then stir. Continue cooking, stirring every minute or two, until they’re golden brown and fork-tender—about 8–10 minutes, depending on size.

Remove the potatoes and any browned bits from the skillet; set aside.

2. Sear the Steak Bites

Raise the heat to medium-high and add the remaining 2 tablespoons of ghee. Once melted, add steak cubes and season lightly with salt and pepper.

Let the steak sear undisturbed for 2 minutes to form a golden crust. Stir and cook another 1–2 minutes, until cooked through and caramelized.

3. Finish & Serve

Add the cooked potatoes back to the skillet and toss everything together. Taste and adjust the seasoning. Finish with freshly chopped parsley, and serve hot!

Cooking Tips

  • Cut potatoes small and even for faster, more consistent cooking.
  • Use a cast iron skillet for the best sear and crispy texture.
  • Let steak sear before stirring for max flavor.
  • A splatter screen helps contain mess while searing.

Storage & Reheating

To store: Refrigerate leftovers in an airtight container for up to 5 days.
To freeze: Let cool, then freeze in a sealed container or freezer bag for up to 3 months.
To reheat: Warm in a skillet over medium heat with a little ghee, or microwave in short bursts.

What to Serve With Steak Bites and Potatoes

This dish is hearty enough to serve on its own, but a simple veggie side makes it even better. Try:

  • Roasted asparagus
  • A fresh green salad
  • Steamed broccoli
  • Sheet pan roasted vegetables
