Ingredients

  • 3–4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 4–6 garlic cloves, finely chopped
  • 1 cup heavy cream (or use half-and-half for a lighter version)
  • 2 tablespoons low-sodium soy sauce
  • 2 tablespoons vegetable oil
  • Salt and pepper, to taste

How to Make It

1. Cook the Rice

Rinse 1 cup of long-grain white rice under cold water until the water runs clear. Combine with 2 cups of water in a saucepan. Bring to a boil, then reduce heat, cover, and simmer for 18–20 minutes until all water is absorbed.

2. Sear the Chicken

While the rice cooks, season chicken breasts with salt and pepper. Heat 2 tablespoons of oil in a large skillet over medium-high heat. Cook chicken for 6–7 minutes per side, or until golden and fully cooked (165°F internal temp). Remove from pan and let rest.

3. Make the Creamy Garlic Sauce

In the same skillet, sauté the chopped garlic for about 1 minute until fragrant. Pour in the cream and soy sauce. Stir continuously and let it simmer for about 5 minutes until slightly thickened.

4. Finish the Dish

Slice the chicken and return it to the skillet. Toss gently to coat in the sauce and warm through, about 2–3 minutes.

5. Assemble the Bowls

Fluff the rice with a fork and divide it among bowls. Top with the creamy garlic chicken and spoon extra sauce over each serving. Garnish with fresh herbs if desired.
