Thai Mango Sticky Rice Recipe
A traditional and tropical dessert that combines sweet, sticky glutinous rice with fresh mango and creamy coconut sauce.
Ingredients
- 2-3 fresh mangoes
- 1 cup glutinous/sweet rice
- 1 cup coconut milk
- 1 tbsp coconut milk (for thickening)
- 1/4 cup sugar
- 1/4 tsp salt
- 1/2 tsp corn starch
- 1/2 tsp sesame seeds
Instructions
- Soak the Rice: Soak the glutinous rice in water for 2 hours or overnight. Drain when ready to cook.
- Steam the Rice: Steam the soaked sticky rice for 20-30 minutes. Check after 20 minutes; if the rice is soft and fully cooked, it’s ready.
Alternative steaming method: Shape aluminum foil into three balls and place them in a pot with water. Place a metal plate over the foil balls and add the drained rice. Cover the pot and steam for 20-30 minutes. - Slice the Mangoes: While the rice cooks, slice the mangoes and set aside.
- Prepare Sweet Coconut Sauce: In a small pot, bring 1 cup of coconut milk, sugar, and salt to a boil. Set aside half of the sauce in a small bowl for later.
- Thicken the Coconut Sauce: Mix 1 tbsp of coconut milk with the cornstarch and add this mixture to the remaining sauce in the pot. Boil for a few minutes until thickened.
- Combine Rice and Coconut Sauce: Once the rice is done, mix the non-thickened coconut sauce into the cooked rice. Let it sit for 15-20 minutes to absorb the sauce.
- Serve: Plate the rice alongside the sliced mangoes. Drizzle the thickened coconut sauce on top and garnish with sesame seeds.
