Sweet Sugar-Coated Shortbread Squares

Whenever my daughter asks for a sweet treat to enjoy with tea, I always keep my promise and whip up something special. These buttery, sugar-coated shortbread squares are quick, easy, and perfect for satisfying those sweet cravings!

Ingredients

  • 6 oz. (¾ cup) butter, room temperature
  • 3.5 oz. (½ cup) superfine sugar
  • 9 oz. (2¼ cups) all-purpose flour
  • ½ cup raw sugar or large-granulated sugar for coating

Instructions

  1. In a mixer, beat the butter and superfine sugar until light and fluffy.
  2. Sift the flour into the bowl and knead until a dough forms.
  3. Shape the dough into a long rectangular prism with your hands on a flat surface.
  4. Roll the dough in raw sugar, wrap it in cling film, and refrigerate for an hour.
  5. After chilling, cut the dough into squares, place them on a parchment-lined baking sheet, and bake at 325°F for 20 minutes.
