Spinach & Cheese Omelette | Easy Breakfast Recipe

This Spinach & Cheese Omelette is one of the most flavorful omelettes you’ll ever make—and it comes together in just 10 minutes! Using simple, everyday ingredients like garlic, onions, spinach, eggs, and cheese, this dish is naturally gluten-free, low carb, and super healthy.

  • 2 tbsp extra virgin olive oil
  • 3 cloves garlic, minced
  • ½ onion, finely diced
  • 2 cups fresh spinach

  • 1 slice Havarti cheese

  • Pinch of sea salt
  • Pinch of black pepper

Instructions:

  1. In a bowl, whisk together the eggs with a pinch of sea salt and black pepper.
  2. Heat 2 tablespoons of olive oil in a nonstick frying pan over medium heat.
  3. Add the diced onion and minced garlic, sautéing for 2–3 minutes until fragrant and softened.
  4. Add the spinach and cook for about 2 minutes until wilted, seasoning with a pinch of sea salt and freshly cracked black pepper.
  5. Pour the egg mixture over the vegetables. After 1 minute, gently run a spatula along the edges to prevent sticking.
  6. After 2 minutes, add the slice of cheese and fold the omelette. Cook for 30 more seconds, then flip and cook another 30 seconds.
  7. Transfer to a plate and serve with sliced tomatoes.

Tips & Tricks:

  • Spinach: Fresh works best, but frozen spinach can be used if fully thawed and drained.
  • Pan: A nonstick frying pan ensures the omelette doesn’t stick and folds easily.
  • Cheese: Havarti adds creaminess, but feel free to swap with Swiss, cheddar, or your favorite melting cheese.
