- 1 cup butternut squash, small dice
- 1 cup carrots, small dice
- 1 cup peas (if frozen, do not thaw)
- 1 can (15.5 oz) garbanzo beans, rinsed and drained
- 1 can (14.5 oz) diced tomatoes
- 1 medium yellow onion, small dice
- 4 cloves garlic, minced
- ½ tsp cinnamon
- 1 tsp curry powder (such as muchi curry)
- 1 tsp garam masala
- 1 Tbsp tomato paste
- 2 tsp kosher salt
- ⅓ cup beef stock
For the Cauliflower & Sweet Potato Topping:
- 1 head cauliflower
- 2 sweet potatoes
- ½ tsp curry powder
- ½ tsp coarse ground black pepper
- 1 tsp kosher salt
- 1 tsp ghee or butter
Instructions
1. Prepare the Topping:
- Preheat the oven to 350°F (175°C).
- Roast sweet potatoes: Rinse, poke with a fork, and place on a baking sheet. Roast for 1 hour or until tender. Once cool enough to handle, peel the skin.
- Steam cauliflower: Cut into florets and steam for 10 minutes, or until tender.
- Mash or puree: Combine cauliflower, sweet potatoes, ghee, and spices in a food processor or mash by hand until smooth. Set aside.
2. Cook the Beef & Vegetable Filling:
- Preheat a sauté pan over medium-high heat. Crumble in ground beef and cook for 1 minute.
- Add garlic, onion, butternut squash, carrots, cinnamon, curry powder, and garam masala. Sauté until onions are translucent.
- Stir in diced tomatoes, tomato paste, and beef stock. Cook for 3 minutes to meld flavors.
- Remove from heat and fold in garbanzo beans and peas.
3. Assemble the Shepherd’s Pie:
- Pour the beef and vegetable mixture into a 9×13-inch casserole dish (or divide into smaller containers for meal prep).
- Spread the mashed cauliflower and sweet potato topping evenly over the filling.
4. Bake:
Bake for 30 minutes until the topping is slightly golden and everything is heated through.
