Similar to Mexican rice, this Spanish rice is the garlicky, well-seasoned side dish you need for a festive dinner or weeknight meal. Also called arroz rojo, it’s full of flavor, perfectly textured, and comes together in just 45 minutes. With a few tips, it’s easy to get every grain fluffy and flavorful!

Ingredients
- 2 Tbsp extra-virgin olive oil
- ½ medium yellow onion, finely chopped
- 3 cloves garlic, finely minced
- 1½ cups long-grain white rice, lightly rinsed and dried
- 2 cups low-sodium chicken broth (or vegetable broth for a vegan version)
- ½ cup canned crushed tomatoes
- 2 tsp kosher salt, plus more to taste
- 1¼ tsp Sazón seasoning
- 1 tsp dried oregano
- ¾ tsp ground cumin
- ½ tsp freshly ground black pepper, plus more to taste
- ¼ tsp cayenne pepper
- Fresh cilantro leaves, for garnish
Instructions
1. Sauté Aromatics
In a medium saucepan, heat olive oil over medium heat. Add the onion and cook, stirring occasionally, until softened and translucent, about 3 minutes. Add the garlic and cook for 2 minutes until fragrant.
2. Toast the Rice
Add the rice to the pan and cook, stirring frequently, until lightly golden and fragrant, about 6 minutes. Toasting the rice enhances flavor and keeps the grains from clumping.
3. Add Liquids and Seasonings
Stir in the chicken broth, crushed tomatoes, salt, Sazón, oregano, cumin, black pepper, and cayenne. Mix until well combined.
4. Simmer
Increase heat to high and bring to a boil. Reduce heat to low, cover, and simmer for 18–20 minutes, or until the liquid is fully absorbed.
5. Rest the Rice
Remove from heat. Remove the lid, then cover the saucepan with a clean kitchen towel and replace the lid. Let the rice rest for 5–10 minutes to allow gentle steaming for perfect texture.
6. Fluff and Serve
Remove the lid and towel. Fluff the rice with a fork, adjust seasoning with salt and pepper, and garnish with fresh cilantro. Serve as a flavorful side for tacos, enchiladas, grilled meats, or any festive dinner.
