- 2 teaspoons cornstarch
- 1 teaspoon cream of tartar
- ½ stick unsalted butter, room temperature
- 2 tablespoons water

For the Cobbler Topping:
- 2 cups all-purpose flour
- ½ cup granulated sugar
- ½ cup brown sugar
- 2 teaspoons baking powder
- 1½ tablespoons cinnamon (reserve ½ tablespoon for garnish)
- 1 stick unsalted butter, cold
- ¼ cup boiling hot water (see notes)
- ½ teaspoon salt
- 3 tablespoons granulated sugar (to dust the top)
Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C). Lightly spray a 9×13-inch baking dish with non-stick cooking spray.
- Prepare the Peaches: In the prepared baking dish, combine the frozen peaches, granulated sugar, brown sugar, vanilla extract, almond extract, cinnamon, nutmeg, cornstarch, cream of tartar, softened butter, water, and lemon juice. Mix until well combined.
- Bake the Peaches: Cover the dish with foil and bake in the preheated oven for 20 minutes.
