Ingredients

  • 4 bananas, mashed

For the creamy layer

  • 1 pint sour cream

Instructions

  1. Dissolve the gelatin
    In a large bowl, whisk together raspberry gelatin and hot water until fully dissolved.
  2. Add fruit
    Stir in frozen raspberries and crushed pineapple with juice. Mix well.
  3. Reserve mixture + add bananas
    Set aside 2 cups of the mixture.
    Add mashed bananas to the remaining gelatin mixture and stir.
  4. Chill base layer
    Pour into a 9×13-inch dish and refrigerate for 1–2 hours until partially set.
  5. Add sour cream layer
    Spread sour cream evenly over the firm gelatin base.
  6. Top with remaining gelatin
    Gently spoon reserved mixture over the sour cream layer.
  7. Final chill
    Refrigerate 2–4 hours (or overnight) until fully set.
  8. Serve
    Cut into squares and garnish with fresh raspberries and mint if desired.
