Smoked Sausage and Sweet Potato Stir-Fry – Quick & Flavorful Weeknight Dinner

This Smoked Sausage and Sweet Potato Stir-Fry is an easy, one-pan meal perfect for busy weeknights! Ingredients

  • 1 ½ lb (650g) sweet potatoes, peeled and diced
  • 1 onion, minced
  • ½ red bell pepper, diced
  • ½ green bell pepper, diced
  • 1 package smoked sausage, sliced
  • 4 tbsp olive oil (or butter/ghee)
  • 2 tsp Italian seasoning
  • ½ tsp red chili flakes (optional)
  • ½ tsp minced garlic
  • ¼ cup (60ml) low-sodium chicken stock (or vegetable/beef)
  • 1 tsp hot sauce (e.g., Sriracha)
  • Salt and freshly cracked black pepper
  • 4 scallion stalks, chopped
  • Chopped parsley, for garnish

Directions

  1. Cook the Sweet Potatoes: Heat 3 tbsp oil in a large skillet over medium heat. Add sweet potatoes, season with salt and pepper, and sauté until golden and tender, about 10 minutes. Remove and set aside.
  2. Brown the Sausage: In the same skillet, heat remaining oil. Add smoked sausage slices and cook 5–7 minutes until browned. Remove and set aside.
  3. Stir-Fry the Peppers: Add bell peppers to the skillet and cook 2 minutes until crisp-tender. Set aside.
  4. Cook Aromatics & Sauce: In the same skillet, add garlic and onion. Season with red pepper flakes, Italian seasoning, salt, and pepper. Sauté until onions are translucent, then deglaze with chicken stock and stir in hot sauce.
  5. Combine Ingredients: Return sweet potatoes, sausage, and peppers to the skillet. Add scallions and mix to coat everything in the sauce. Cook 2–3 more minutes.
  6. Serve: Adjust seasoning if needed. Garnish with parsley and serve immediately.

  • Add More Veggies: Toss in green beans, broccoli, or asparagus for extra nutrition.
  • Spicy Twist: Increase hot sauce or add cayenne for more heat.
