Slow Cooker Spinach Artichoke Chicken

Ingredients:

  • 8 cups fresh spinach, loosely packed and chopped
  • 1/4 cup chicken broth
  • 4 chicken breast fillets
  • 3 garlic cloves, fresh and chopped
  • 1/4 sweet onion, finely chopped
  • 4 tablespoons reduced-fat cream cheese (not fat-free)
  • 4 tablespoons shredded Parmesan cheese
  • 14 ounces artichoke hearts (canned, preservative-free or 6-8 jarred artichoke hearts, drained and chopped)
  • 1 cup grape or cherry tomatoes, chopped
  • Salt and pepper to taste

Instructions:

  1. In a 4-quart slow cooker, combine the spinach, chicken broth, and chicken breasts. Season with garlic, onion, salt, and pepper.
  2. Cover and cook on low for 6-8 hours or on high for 4-6 hours.
  3. Just before serving, gently remove the chicken breasts and place them on serving platters.
  4. Stir in the cream cheese, Parmesan cheese, and artichokes until creamy. Spoon the sauce over the chicken.
  5. Top with chopped tomatoes and sprinkle with extra Parmesan cheese if desired.
