Slow Cooker Mexican Chicken Lime Soup

Forget the restaurant—make this flavorful Slow Cooker Mexican Chicken Lime Soup at home! Sweet, spicy, and tangy, this soup is packed with shredded chicken, corn, avocado, rice, and all your favorite toppings. Perfect for meal prep or cozy weeknight dinners.

Why You’ll Love It

This soup is your homemade version of a classic Mexican favorite. You control the ingredients, including the salt and spice, so it’s healthier and customized to your taste. The lime juice adds a bright, tangy kick, while the shredded chicken makes it hearty and satisfying.

Ingredients You’ll Need

  • Chicken: 1–2 pounds boneless skinless chicken breasts or thighs
  • Broth: 4 cups chicken broth (homemade or store-bought)
  • Vegetables & Aromatics: ½ sweet onion (chopped), 4 garlic cloves (minced), 2 jalapeños (diced, optional)
  • Spices: 2 tsp cumin, 2 tsp Mexican oregano, ½ tsp salt, ⅛ tsp black pepper
  • Lime: ¼ cup lime juice (adjust to taste)
  • Optional Garnishes: Cooked white rice, diced avocado, diced red onion, cilantro, pico de gallo, extra lime wedges

How to Make It

  1. Add Ingredients to Slow Cooker: Place chicken, broth, onion, garlic, cumin, oregano, jalapeños, salt, and pepper in the slow cooker. Do not add lime juice yet.
  2. Cook: Cover and cook on low for 6 hours or high for 3–4 hours, until the chicken is cooked through and tender.
  3. Shred Chicken: Remove chicken and shred with two forks. Return shredded chicken to the soup and stir in lime juice.
  4. Adjust & Serve: Taste and adjust seasonings. Serve with your favorite garnishes such as rice, avocado, cilantro, red onion, pico de gallo, and extra lime wedges.

Optional Add-Ins & Modifications

  • Vegetables: Add bell peppers, zucchini, diced tomatoes, or fire-roasted tomatoes.
  • Potatoes: Dice and add for extra heartiness.
  • Beans: Black beans, pinto beans, or kidney beans make it more filling.
  • Extra Heat: Try chipotle peppers, diced chiles, or additional jalapeños.
  • Cheese: Pepper jack, cheddar, mozzarella, or cotija can be sprinkled on top.

Tips

  • For a tangier soup, use the full ¼ cup of lime juice or add more to taste.
  • Make it a one-pot meal by adding cooked rice directly to the soup before serving.
  • Customize garnishes to your liking—tortilla strips or guacamole make great add-ons.

This Slow Cooker Mexican Chicken Lime Soup is easy, cozy, and packed with bold flavors—perfect for meal prep, family dinners, or when you crave a zesty Mexican-inspired soup!
