This Slow-Cooker Lemon Chicken is a simple yet flavorful recipe, bursting with zesty lemon and rich garlic. It’s an all-in-one meal, with tender chicken thighs, baby potatoes, and fresh asparagus cooked together in the crockpot—no need for extra sides!
Ingredients
- 1 red onion
- 6-8 bone-in, skin-on chicken thighs
- 1-1.5 lbs baby potatoes
- 1 lemon
- 2 Tbsp olive oil
- 2 Tbsp honey
- 4 cloves garlic, finely chopped
- ½ Tbsp fresh thyme leaves
- Sea salt, to taste
- Pepper, to taste
- A bunch of thin green asparagus
Instructions
- Peel and slice the red onion, placing it at the bottom of the slow cooker in a single layer.
- Add the chicken thighs on top, also in one layer.
- Wash and halve the baby potatoes, then add them to the slow cooker.
- In a small bowl, mix the lemon zest, juice of the same lemon, olive oil, honey, thyme, garlic, sea salt, and pepper. Pour this mixture over the chicken and potatoes.
- Cover the slow cooker with the lid and cook on high for 3-4 hours or on low for 6-8 hours, depending on your schedule.
- About 15-20 minutes before the cooking time is up, switch the slow cooker to high and add the asparagus on top. Cover and continue cooking. If the asparagus is thick, it may take a little longer to cook.
- Optional step: For crispy chicken skin, remove the thighs 5 minutes before cooking ends, place them on a baking sheet, and broil on high for 3-5 minutes until the skin turns golden.
