Ingredients:

  • 2 pounds boneless, skinless chicken breasts
  • 1 packet ranch seasoning mix (about 1 ounce)
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • 1/2 teaspoon black pepper
  • 8 ounces cream cheese, softened and cubed
  • 1/2 cup chicken broth
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Directions:

  1. Prepare the slow cooker: Place the chicken breasts in the bottom of your slow cooker.
  2. Season the chicken: Sprinkle the ranch seasoning mix, onion powder, garlic powder, and black pepper evenly over the chicken breasts.
  3. Add cream cheese: Place the cream cheese cubes on top of the seasoned chicken.
  4. Add broth: Pour chicken broth around the chicken without washing away the seasonings.
  5. Cook the chicken: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and can be easily shredded.
  6. Shred the chicken: Once the chicken is fully cooked, shred it in the slow cooker using two forks. Stir the mixture so the chicken combines with the melted cream cheese and seasonings.
  7. Add cheese: Sprinkle shredded cheddar cheese over the chicken and stir it in. Cover and cook for an additional 10-15 minutes until the cheese melts and the mixture is creamy.
  8. Garnish and serve: If desired, sprinkle with chopped parsley before serving. Serve over rice, pasta, or with your favorite side.
