4. Sauté the Vegetables

Add mushrooms and shallots to the skillet over medium-high heat. Cook 6 minutes, stirring halfway through, until browned and softened.

5. Layer Everything in the Slow Cooker

To the slow cooker, add:

  • Mushroom-shallot mixture

  • 1 lb crimini mushrooms, halved
  • 3 shallots, quartered
  • 3 garlic cloves, minced
  • 5 carrots, cut into 1-inch pieces
  • 2 cups chicken broth
  • 3 tbsp tomato paste
  • 5 thyme sprigs
  • 2 bay leaves
  • ½ lb white pearl onions, peeled
  • 2 tbsp unsalted butter
  • 2 tbsp flour

Instructions

  1. Boil wine for 15 minutes to reduce by half.
  2. In a hot skillet, cook bacon until crispy; remove, leaving bacon fat in pan.
  3. Season chicken with salt and pepper and brown on both sides.
  4. Sauté mushrooms and shallots for 6 minutes.
  5. Add sautéed veggies, garlic, carrots, half the bacon, broth, remaining salt, tomato paste, thyme, bay leaves, pearl onions, and reduced wine to the slow cooker.
  6. Stir, then nestle chicken into the mixture. Cook on LOW for 7 hours.
  7. Combine butter and flour; stir into slow cooker. Cook for 1 more hour until thickened.
