Slow Cooker Chicken Stew

Ingredients

  • 2 tablespoons olive oil
  • 1 ½ pounds chicken thighs, cut into 1-inch pieces
  • 3 tablespoons all-purpose flour
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • ½ teaspoon salt, plus more for seasoning
  • 6 cloves garlic, minced
  • 1 onion, diced
  • 3 carrots, peeled and sliced
  • 2 large potatoes, cut into ½-inch cubes (about 1 pound)
  • 3 cups chicken broth
  • 1 bay leaf
  • ½ cup milk
  • 1 cup frozen green peas
  • Black pepper, to taste

Instructions

  1. Prepare the Chicken: Season the diced chicken generously with salt and pepper.
  2. Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook for 4-5 minutes, just until browned on all sides. (It doesn’t need to be fully cooked at this stage.) If your slow cooker has a removable stovetop-safe pot, you can sear the chicken directly in it.
  3. Combine Ingredients: Transfer the seared chicken to the slow cooker. Add the flour, thyme, rosemary, and salt, stirring until the chicken is well-coated. Then, add the garlic, onion, carrots, and potatoes, mixing to combine. Pour in the chicken broth and add the bay leaf.
  4. Slow Cook: Cover and cook on low for 7-8 hours or on high for 3-4 hours.
  5. Finish the Stew: Once cooked, stir in the frozen peas and milk. Cook for an additional 10-15 minutes on high until the peas are warmed through. If needed, adjust the stew’s thickness by adding more flour for a thicker consistency or a splash of chicken broth for a thinner stew.
  6. Taste and Serve: Before serving, taste the stew and adjust the salt and pepper as desired. Enjoy immediately, or store leftovers in an airtight container in the fridge for up to 5 days or freeze for up to 3 months.
