Simple Vanilla Cake

Ingredients:

  • 1 ½ cups (225 g) plain flour / all-purpose flour
  • 1 tablespoon (16 g) baking powder
  • 1 cup (240 g) caster sugar / superfine sugar
  • 180 g (¾ cup / 6.5 oz) butter, melted
  • 1 ½ cups (375 mL) milk
  • 2 teaspoons (10 g) vanilla extract

Instructions:

  1. Preheat the oven to 160°C / 320°F (fan/convection) or 180°C / 355°F (standard). Grease and line a 20 cm (8-inch) round cake tin with baking paper.
  2. In a large mixing bowl, sift together the plain flour and baking powder. Whisk in the sugar.
  3. Create a well in the center of the dry ingredients and add the melted butter, milk, and vanilla extract. Whisk everything together until well combined. (Note: The butter may solidify a little, making the batter slightly lumpy, but this is perfectly fine!)
  4. Pour the batter into the prepared cake tin and bake for 45-50 minutes, or until golden brown and a skewer inserted into the center of the cake comes out clean.
  5. Let the cake cool in the tin for 10 minutes, then transfer it to a wire rack to cool completely.

Tips:

  • If you want to make the cake even more delicious, top it with vanilla buttercream frosting. Simply beat together 125 g (4.5 oz) softened butter, 1 ½ cups sifted icing sugar, 1 tsp vanilla extract, and 2 tbsp milk until fluffy.
  • For extra flair, serve the cake with fresh whipped cream, berries, or a sprinkle of rainbow sprinkles for a fun, colorful twist.

Storage:

  • Store this cake in an airtight container at room temperature for up to 5 days, and it will remain wonderfully moist.
  • You can also freeze it! Wrap the cake tightly in cling wrap, place it in a zip-lock bag, and freeze. Let it defrost for 6 hours or overnight before serving.
