Simple Loaded Breakfast Skillet Recipe

Ingredients

  • 4–6 strips bacon, cut into 1-inch pieces
  • 20 oz refrigerated potatoes or 3–4 cups frozen hash browns
  • ½ cup diced sweet onion (optional)
  • ½ cup diced red bell pepper (optional)
  • 8–10 cooked sausage links, chopped
  • Salt and pepper, to taste
  • 4 eggs
  • 1 cup shredded cheddar cheese (or your favorite cheese)

Toppings (optional):

  • Sliced green onions
  • Sliced tomatoes
  • Sliced avocado
  • Sliced jalapeños (seeds removed)
  • Fresh parsley

Instructions

  1. Cook the bacon: In a large cast iron or heavy skillet, cook the bacon pieces over medium heat until crispy. Remove the bacon with a slotted spoon and place on paper towels to drain. Leave the bacon fat in the pan.
  2. Brown the potatoes: Add the potatoes to the skillet and cook until golden brown and crispy, about 8-10 minutes.
  3. Cook the veggies: If using, add diced onions and bell peppers to the skillet with the potatoes. Cook, stirring occasionally, until vegetables are tender, about 5 minutes.
  4. Add sausage and bacon: Stir in the cooked sausage and bacon pieces. Heat everything through.
  5. Season: Sprinkle salt and pepper to taste.
  6. Add the eggs: Make four wells in the potato mixture and carefully crack one egg into each well.
  7. Cook the eggs: Cover the skillet and cook over medium-low heat until the egg whites are set and yolks are cooked to your liking, about 8-10 minutes.
  8. Add cheese: Sprinkle shredded cheese over the skillet. Cover again and cook until the cheese melts.
  9. Serve: Top with your favorite garnishes and serve immediately.
