Sheet Pan Salmon and Potatoes with Veggies

If you’re looking for an easy, healthy, and flavor-packed dinner, this Sheet Pan Salmon and Potatoes with Veggies recipe is the one to try. Juicy salmon fillets are glazed with a honey Dijon garlic chili sauce and baked alongside crispy roasted potatoes and tender vegetables—all on a single pan. It’s quick, simple, and perfect for busy weeknights with minimal cleanup.

One of the best parts about sheet pan meals is how easily everything comes together. While the potatoes roast, you can prepare the glaze for the salmon. Then, everything bakes together on one tray, creating a complete meal that’s ready in under an hour.

Why You’ll Love This Recipe

  • One-pan meal: Salmon, potatoes, and veggies cook together on a single tray.
  • Flavorful glaze: The honey Dijon garlic chili sauce adds the perfect balance of sweet, smoky, tangy, and spicy.
  • Customizable: Switch up the seasoning or vegetables to suit your taste.
  • Quick and easy: Dinner is on the table in about 45 minutes.

Ingredients

  • 4 salmon fillets (about 6 oz each | 170 g)
  • 1½ lbs baby potatoes, halved
  • 1 lb asparagus, trimmed
  • 1 cup cherry tomatoes (on or off the vine)
  • 4 tbsp olive oil, divided
  • Salt and black pepper, to taste
  • 2 tsp seasoning blend of choice + ½ tsp extra (lemon pepper, Italian, za’atar, or your favorite)
  • 2 tbsp honey
  • 1½ tsp Dijon mustard
  • 1 tsp sriracha or garlic chili sauce (adjust to taste)
  • 1 tbsp melted butter
  • Fresh parsley and lemon wedges, for serving

Instructions

  1. Preheat oven to 425°F (220°C). Line a large sheet pan with foil or parchment paper.
  2. Roast the potatoes: Toss halved baby potatoes with 2 tbsp olive oil, 2 tsp seasoning blend, salt, and pepper. Spread on sheet pan and bake for 20 minutes, shaking halfway through.
  3. Prepare the glaze: In a small bowl, whisk together melted butter, honey, Dijon mustard, sriracha, ½ tsp seasoning blend, plus a pinch of salt and pepper. Brush over salmon fillets.
  4. Add salmon and veggies: Remove the sheet pan from the oven. Push potatoes to one side, then place salmon, asparagus, and tomatoes on the pan. Drizzle remaining 2 tbsp olive oil over veggies and season with salt and pepper.
  5. Bake: Return the pan to the oven and bake for another 15 minutes, or until salmon is opaque and flakes easily and asparagus is tender. For extra color, broil for 2 minutes at the end.
  6. Serve: Garnish with fresh parsley and lemon slices. Enjoy immediately!

Recipe Tips

  • Choose your seasoning: Lemon pepper, Italian seasoning, or even Tex-Mex spice blends all work beautifully.
  • Swap the fish: Cod, halibut, or trout are great alternatives to salmon.
  • Veggie options: If you use denser vegetables like carrots or Brussels sprouts, add them in with the potatoes so they have enough roasting time.
  • Extra glaze: Double the sauce if you like your salmon extra coated.

Serving Ideas

This sheet pan salmon is a full meal on its own, but it also pairs well with:

  • A simple green salad with cucumbers and olives.
  • Crusty bread to soak up extra glaze.
  • Steamed rice or quinoa for extra heartiness.
