Scandinavian Oven-Baked Salmon with Dill Sauce and Crispy Potato Wedges

This is Scandinavia on a plate! 🐟✨ Fresh salmon, fragrant dill, golden potato wedges, and a creamy dill-pickle sauce come together in a meal that’s as comforting as it is elegant. Salmon and dill are a classic pairing we never get tired of, and this dish is one we enjoy often in many different variations.

For this version, I’ve oven-baked a salmon fillet layered with dill and lemon zest, served it alongside crispy potato wedges tossed in olive oil and sea salt, and paired it with a rich dill sauce enhanced with pickles for extra flavor and texture. It’s simple, wholesome, and absolutely delicious. You have to try it!

Ingredients (Serves 4)

Salmon

  • 1.6 lb salmon fillet
  • ½ pot fresh dill (enough for both salmon and sauce)
  • 1 lemon (zest and juice)
  • 1 tbsp olive oil
  • Pinch of salt

Potato Wedges

  • 2 lb potatoes
  • 2–3 tbsp olive oil
  • 1 tsp sea salt flakes
  • Fresh black pepper, to taste

Pickle & Dill Sauce

  • 1 cup sour cream
  • 3 tbsp mayonnaise
  • 10 pickles, finely diced
  • ½ pot fresh dill, finely chopped
  • Pinch of salt

Instructions

1. Prepare the Salmon

  • Preheat oven to 350ºF (175ºC).
  • Place the salmon fillet skin-side down in an oven-safe dish.
  • Finely chop the dill. Zest and juice the lemon.
  • Drizzle the salmon with lemon juice and olive oil, then sprinkle over dill and lemon zest to cover the entire surface. Finish with a pinch of salt.
  • Bake for 20–25 minutes, or until the internal temperature reaches 130º–140ºF (55º–60ºC). I prefer pulling it out at 130ºF, since the salmon will continue cooking slightly after being removed from the oven.

2. Make the Potato Wedges

  • Preheat oven to 425ºF (220ºC).
  • Wash (and peel if desired) the potatoes, then cut into wedges.
  • Spread them out in a large baking dish, ensuring they’re not piled on top of each other.
  • Toss with olive oil, sea salt, and black pepper.
  • Bake for 35–40 minutes, or until golden brown with a crisp crust.

3. Mix the Dill Sauce

  • In a bowl, combine sour cream, mayonnaise, diced pickles, dill, and a pinch of salt.
  • Refrigerate until serving time for best flavor.

To Serve

Plate the baked salmon with a side of crispy potato wedges and a generous spoonful of creamy dill-pickle sauce. Garnish with extra dill if desired.
