This recipe was inspired by my sausage-stuffed acorn squash, using many of the same ingredients in a heartier, larger winter squash. Here’s the quick breakdown:

  1. Roast the butternut squash halves until caramelized and fork-tender.
  2. Prepare the sausage filling by sautéing onion, sausage, garlic, herbs, spinach, cranberries, and pecans.
  3. Scoop out the centers of the roasted squash to create space for stuffing.
  4. Fill each half generously and finish with fresh herbs—and optional cheese if you want extra richness.

It yields 4 large portions or 8 smaller ones, perfect for serving family and guests.

And yes, adding Parmesan, Gruyere, or Asiago is completely optional, but delicious if you want a cheesy finish.


Is Butternut Squash a Fruit or a Vegetable?

Even though we cook it like a vegetable, butternut squash is botanically a fruit. Why? Because fruits develop from the flowering part of the plant and contain seeds—and squash fits the definition exactly.


Ingredients You’ll Need

For the Roasted Butternut Squash

  • 2 medium/large butternut squash
  • Olive oil
  • Salt
  • Black pepper

For the Sausage Filling

  • Olive oil
  • Onion (yellow, sweet, or white)
  • Spicy Italian sausage (or mild/sweet Italian sausage)
  • Garlic
  • Italian seasoning (or Herbs de Provence)
  • Fresh spinach (or frozen, thawed and drained; kale also works)
  • Dried cranberries
  • Pecans (or walnuts)

Best Sausage to Use

Spicy Italian sausage adds the perfect kick and balances the sweetness of the squash. If you prefer something milder, use mild or sweet Italian sausage—or even chicken sausage. If using sausage links, simply remove the casings before cooking.


How to Make Sausage Stuffed Butternut Squash

1. Roast the Squash

  1. Preheat oven to 400°F.
  2. Halve each squash lengthwise and scoop out the seeds.
  3. Place the halves cut-side up on a baking sheet.
  4. Drizzle with olive oil, season with salt and pepper, then flip them cut-side down.
  5. Roast for 30–40 minutes, or until soft and golden.

2. Make the Sausage Filling

While the squash roasts:

  1. Heat olive oil in a skillet and sauté the onion for 2 minutes.
  2. Add sausage, garlic, and Italian seasoning. Cook until browned.
  3. Stir in spinach until wilted.
  4. Add dried cranberries and pecans.
  5. Taste and adjust seasoning (usually no added salt is needed).

3. Create Space for Stuffing

  1. Remove squash from the oven and flip the halves cut-side up.
  2. Let cool slightly.
  3. Scoop out the center flesh, leaving a 1-inch border around the edges.

4. Stuff and Serve

  1. Reheat the sausage mixture if needed.
  2. Divide evenly among the squash halves.
  3. Garnish with black pepper and fresh thyme.
  4. Serve warm.

  • Prep while roasting: Make the filling while the squash cooks to save time.
  • Season the squash well: The squash needs salt—sausage usually provides enough for the filling.
  • Keep it hot: Reheat the filling before stuffing so everything is piping hot when served.
  • Optional cheese: Parmesan, Gruyere, or Asiago add delicious richness.

Storage & Reheating

  • Refrigerate: Store in an airtight container for up to 4 days.
  • Freeze: Freeze for up to 2 months.
  • Reheat: Warm in a 350°F oven for about 30 minutes, or until heated through.
