Two Small Tricks That Make This Recipe Better

There are two simple techniques in this recipe that make a big difference.

1. Grated onion with soaked breadcrumbs

Instead of using chopped onion, the onion is grated directly over the breadcrumbs.

The breadcrumbs absorb the onion juices, which adds moisture and flavor to the patties.

This method helps create beef patties that are:

  • more tender
  • more flavorful
  • less likely to fall apart

It’s a technique that works beautifully in meatballs as well.


2. Finish cooking the patties in the gravy

The patties are first seared in a very hot skillet to create a browned crust.

  • 1 egg
  • 2 tbsp ketchup
  • 1 beef bouillon cube, crumbled
  • ½ tsp Worcestershire sauce
  • 3 tsp Dijon mustard (or 2 tsp dry mustard powder)

For the Mushroom Gravy

  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • ½ onion, finely chopped
  • 150 g (5 oz) mushrooms, sliced
  • 2 tbsp butter
  • 3 tbsp flour
  • 2 cups beef broth
  • ½ cup water
  • 2 tsp Dijon mustard
  • 2 tsp Worcestershire sauce
  • salt and pepper to taste

How to Make Salisbury Steak

Step 1 – Prepare the onion mixture

Place the breadcrumbs in a bowl.

Grate the onion directly over the breadcrumbs using a box grater. Mix together and let the breadcrumbs soak up the onion juices for a few minutes.


Step 2 – Mix the patties

Add the ground beef, garlic, egg, ketchup, bouillon, Worcestershire sauce, and mustard to the bowl.

Mix everything together using your hands until well combined. The mixture should become slightly sticky so the patties hold their shape.


Step 3 – Shape the patties

Divide the mixture into five portions and shape them into oval patties about ¾ inch thick.

Press them firmly so they stay together while cooking.


Cooking the Patties and Making the Gravy

Step 4 – Sear the patties

Heat oil in a large skillet over high heat.

Cook the patties for about 1 minute per side until browned. They will still be raw inside at this stage.

Remove them from the pan and set aside.


Step 5 – Cook the aromatics

In the same skillet, add the chopped onion and garlic.

Cook for about 2 minutes until softened.


Step 6 – Cook the mushrooms

Add the mushrooms and cook for 2–3 minutes until they begin to turn golden.


Step 7 – Make the gravy base

Reduce the heat to medium.

Add butter to the skillet. Once melted, stir in the flour and cook for about 30 seconds, stirring constantly.


Step 8 – Add the broth

Gradually whisk in the beef broth and water.

Once the mixture becomes smooth, add the Dijon mustard and Worcestershire sauce.


Step 9 – Finish cooking the steaks

Return the patties to the skillet along with any juices that collected on the plate.

Let them simmer in the gravy for 5–7 minutes until fully cooked and the gravy thickens.

If the gravy becomes too thick, simply add a little water.


Serving Suggestions

Salisbury steak is best served with classic comfort-food sides such as:

  • mashed potatoes
  • buttered egg noodles
  • steamed green beans
  • roasted vegetables
  • rice

Mashed potatoes are especially perfect because they soak up the rich mushroom gravy.


Storage and Leftovers

This dish stores very well and makes great leftovers.
