Ingredients:
- 16 even-sized open cup mushrooms, stems trimmed level
- 3 tablespoons olive or vegetable oil
- 2 cloves garlic, finely chopped
- 3 tablespoons unsalted butter, softened
- 2 tablespoons fresh thyme, chopped
- ½ teaspoon garlic powder
- 5 tablespoons fresh breadcrumbs
- 1½ tablespoons lemon juice
- Salt and freshly ground black pepper, to taste
Instructions:
- Preheat your oven to 400°F (200°C).
- Heat oil in a large skillet over medium-high heat. Fry the mushrooms cap-side down for 2–3 minutes, just until lightly golden.
- Arrange the mushrooms stem-side up in a 9×13-inch baking dish (or similar ovenproof dish).
- In a small bowl, mix together the softened butter, garlic, thyme, lemon juice, garlic powder, salt, and pepper.
- Spoon a little of the garlic butter mixture into each mushroom.
- Top each mushroom with a pinch of breadcrumbs, pressing them down lightly.
- Bake for 15 minutes, or until the mushrooms are tender and the tops are golden and crisp.
