  • 1 teaspoon black pepper
  • 1 head of garlic, top sliced off
  • 1 lemon, quartered

How to Make Roasted Potatoes with Baked Feta and Garlic

1. Prep the Oven and Potatoes

Preheat the oven to 390°F (200°C). Cube the potatoes and add them to a baking dish. Drizzle with 1 tablespoon of olive oil and sprinkle with thyme, oregano, salt, and pepper. Toss to coat evenly.

2. Add Feta, Garlic, and Lemon

Nestle the block of feta in the center of the dish. For extra flavor, press one side of the feta into the seasoned potatoes before flipping it. Add the garlic head and two lemon wedges to the pan. Drizzle everything with the remaining olive oil.

3. Bake Until Golden and Crispy

Roast for 45–55 minutes, until the potatoes are crispy and the feta is golden. Check on the garlic around the 35-minute mark—if it’s getting too brown, remove it early.

4. Mash Garlic and Finish the Dish

Once the garlic is cool enough to handle, squeeze the softened cloves out of their skins and mash them into a paste. Stir the garlic paste, juice from the remaining lemon wedges, and chopped basil into the roasted potatoes and feta.

5. Add a Touch of Sweetness

Drizzle with honey and sprinkle extra basil on top before serving for a bright, herby finish.
