If I ever compiled a list of “novels and foods I’d never get tired of,” The Lord of the Rings by J.R.R. Tolkien and mushrooms would certainly make the cut. You might wonder what connects Tolkien’s Middle-earth to mushrooms—well, for those who don’t know, in Tolkien’s world, mushrooms are a favorite snack of Hobbits, especially the protagonist, Frodo Baggins.

Inspired by this, I decided to create a rustic side dish that might easily be enjoyed by Hobbits: roasted mushrooms, lightly fried and then baked with garlic, butter, fresh thyme, breadcrumbs, and a touch of lemon. The result is a flavorful, hearty dish perfect for any occasion.
Mushrooms are versatile and full of nutrients, including selenium. While they’re delicious in many forms, roasting them concentrates their flavor, making them even more irresistible. If you make this dish, I’d recommend doubling the recipe—these mushrooms disappear quickly!
Roasted Mushrooms with Garlic & Thyme

Ingredients:
- 16 even-sized open cup mushrooms, stalks cut level
- 3 tbsp olive or vegetable oil
- 2 cloves garlic, finely chopped
- 3 tbsp unsalted butter, softened
- 2 tbsp fresh thyme, chopped
- ½ tsp garlic powder
- 5 tbsp fresh breadcrumbs
- 1½ tbsp lemon juice
- Salt and freshly ground black pepper to taste
Instructions:
- Preheat your oven to 400°F (200°C). Lightly fry the mushrooms, cap-side down, in hot oil for 2-3 minutes.
- Arrange the mushrooms in a 9×13-inch baking dish (or any rectangular oven-safe dish you have) with the stalks facing upwards.
- In a small bowl, mix together the softened butter, garlic, thyme, lemon juice, garlic powder, salt, and pepper.
- Spoon the garlic butter mixture onto each mushroom, then sprinkle breadcrumbs on top.
- Either refrigerate for later or bake immediately in the preheated oven for 15 minutes, until the mushrooms are golden around the cap.
