Roasted Jalapeño Popper Grilled Cheese

Ingredients You’ll Need

Jalapeño Peppers

Roasting the peppers softens the heat and adds a smoky depth you won’t get from raw peppers. Want more spice? Choose jalapeños with “stretch marks”—the little white lines on the skin.

Bacon

Crispy bacon adds the perfect salty crunch. Baking the bacon keeps cleanup simple—just spread slices on a foil-lined sheet and bake at 415°F for 18–20 minutes.

Bread

Texas toast is ideal because it’s thick and sturdy, but any favorite bread works. Just keep in mind: thinner bread may toast faster.

Cheeses

  • Cream cheese creates that classic jalapeño popper filling.
  • Cheddar cheese melts beautifully and adds sharp, cheesy goodness.

Do I Have to Roast the Jalapeños?

You don’t have to, but I highly recommend it. Roasting mellows the heat, softens the texture, and adds a smoky caramelized flavor that takes the filling to another level. It’s a quick extra step with a big payoff.


Can I Use a Different Bread?

Absolutely. Texas toast is my go-to, but sourdough, brioche, or even classic white bread will work. Just watch your cooking time—thinner bread will brown more quickly.


Air Fryer Instructions

You can roast the jalapeños AND cook the sandwiches right in your air fryer.

To roast jalapeños:
Brush with olive oil and air fry at 425°F for 7 minutes.

To cook the sandwich:

  1. Preheat air fryer to 350°F and line with parchment.
  2. Assemble the sandwich as directed.
  3. Air fry for 5 minutes, flip, then cook 3 more minutes.
  4. Serve immediately.

Ingredients

  • 4 medium jalapeños, halved and seeded
  • 1 tablespoon olive oil
  • 4 ounces cream cheese, softened
  • ½ teaspoon garlic salt
  • ¼ teaspoon black pepper
  • ½ teaspoon onion powder
  • 1 cup shredded mild cheddar cheese, divided
  • 6 slices cooked bacon, divided
  • 4 slices Texas toast (or any bread you love)
  • 4 tablespoons unsalted butter, divided

Instructions

  1. Roast the Jalapeños
    Preheat oven to 425°F and line a baking sheet with parchment. Brush jalapeños with olive oil and roast for about 15 minutes, until lightly charred. Let cool slightly.
  2. Prepare the Filling
    In a bowl, mix cream cheese, garlic salt, pepper, and onion powder until smooth. Chop the roasted jalapeños and fold them into the cream cheese mixture.
  3. Assemble the Sandwiches
    Butter one side of each bread slice. Spread half of the cream cheese mixture on the unbuttered side of one slice. Top with 3 slices of bacon and ½ cup cheddar cheese. Add another slice of bread, buttered side out. Repeat for the second sandwich.
  4. Cook the Sandwiches
    Heat a skillet over medium. Cook each sandwich 3–5 minutes per side, or until the bread is golden and the cheese is melted.
  5. Serve Immediately
    Slice in half and enjoy the melty, spicy goodness!
