Roasted Cabbage Wedges: A Simple and Healthy Side Dish

Ingredients

For the Roasted Cabbage

  • 1 medium green cabbage
  • 2 tablespoons olive oil
  • A sprinkle of salt and pepper

For the Lemon Garlic Butter

  • 4 tablespoons unsalted butter
  • 1 tablespoon minced garlic (about 4 cloves)
  • 1 tablespoon freshly squeezed lemon juice
  • A sprinkle of salt and pepper

Instructions

Step 1: Prepare the Cabbage

  1. Preheat your oven to 425°F (220°C) and line a cookie sheet with aluminum foil for easy cleanup.
  2. Remove the outer leaves of the cabbage and cut it into 8 wedges. It’s best to leave the stem and core intact, as it helps the wedges hold their shape during cooking.
  3. Place the cabbage wedges on the foil-lined cookie sheet. Brush both sides with olive oil and sprinkle with salt and pepper to taste.

Step 2: Roast the Cabbage

  1. Roast the cabbage in the oven for 20 minutes. After 20 minutes, carefully turn the wedges with a flipper and roast for an additional 20 minutes or until they are slightly browned around the edges and fork-tender. Adjust the cooking time based on the size of your cabbage.

Step 3: Make the Lemon Garlic Butter

  1. While the cabbage is roasting, melt the unsalted butter in a small saucepan over medium-high heat. Add the minced garlic and stir constantly with a wooden spoon until the butter and garlic turn a golden brown color.
  2. Once golden, remove the saucepan from the heat and transfer the browned butter and garlic to a small bowl. Stir in the freshly squeezed lemon juice, along with a sprinkle of salt and pepper. Adjust the seasonings to taste.

Step 4: Serve

  1. When the roasted cabbage is ready, brush the lemon garlic butter generously onto each wedge. For a polished presentation, cut off any core that extends beyond the edge of the wedge.
  2. Serve warm and enjoy this flavorful, healthy side dish!

Notes

  • For the best results, choose a heavy, tightly-leaved cabbage.
  • Ensure that the wedges are cut to a uniform size to ensure even cooking.
  • Keep the core intact until after roasting, as it helps the wedges maintain their shape while flipping.
  • Roast on the middle rack in a preheated oven set at 400°F, 425°F, or 450°F, adjusting cooking times as necessary for higher temperatures.
  • If you prefer your cabbage more caramelized, you can roast it longer on each side at 400°F or increase the temperature to 425°F, but keep a close eye to prevent burning.
