Protein & Sauce

  • 20 oz Ribeye steak
  • 1 Beef demi-glace packet (contains milk)
  • 2 tbsp Butter (contains milk)
  • 2 cloves Garlic
  • 1 tsp Vegetable oil
  • Salt & pepper, to taste

Sides

  • 12 oz Yukon Gold potatoes
  • 6 oz Green beans
  • 6 tbsp Sour cream (contains milk)
  • ¼ oz Fresh chives
  • 1 tbsp Olive oil

(Optional: Swap ribeye for sirloin or strip steak; use veggie demi-glace for a lighter sauce.)


Step-by-Step Instructions

1. Prep the Ingredients

  • Preheat oven to 425°F. Adjust rack to the top position.
  • Dice potatoes into ½-inch cubes. Thinly slice chives.
  • Place garlic cloves in foil with a drizzle of olive oil, salt, and pepper. Seal tightly.

2. Roast Garlic & Green Beans

  • Place garlic packet on a baking sheet and roast for 10 minutes.
  • Add green beans to the same sheet, toss with olive oil, salt, and pepper. Roast 12–15 minutes, until garlic softens and beans are tender-crisp.

3. Make the Mashed Potatoes

  • Boil potatoes in salted water until fork-tender, 15–20 minutes.
  • Reserve 1 cup cooking water, then drain.
  • Mash with sour cream, salt, and pepper. Add cooking water as needed until creamy. Cover to keep warm.

4. Sear the Ribeye

  • Pat steak dry with paper towels. Season generously with salt and pepper.
  • Heat vegetable oil in a pan over medium-high heat. Sear steak 3–6 minutes per side, depending on thickness and desired doneness.
  • Transfer to a cutting board to rest.

5. Make the Pan Sauce

  • Mash roasted garlic.
  • In the same pan, melt 1 tbsp butter. Add garlic and cook 30–60 seconds.
  • Stir in demi-glace and ¼ cup water. Simmer until slightly thickened, 1–2 minutes.
  • Turn off heat, then stir in another 1 tbsp butter and any steak drippings. Season to taste.

6. Finish & Serve

  • Slice steak against the grain.
  • Stir half the chives into mashed potatoes.
  • Plate steak, potatoes, and green beans. Spoon sauce over steak and potatoes. Garnish with remaining chives.
