Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. Cream butter and sugar together in a large bowl until light and fluffy.
  3. Add egg and vanilla; mix until fully combined.
  4. In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
  5. Gradually add dry ingredients to the wet mixture, stirring just until combined.
  6. Fold in chopped rhubarb (and white chocolate chips or nuts, if using).
