Pumpkin Bars with Cream Cheese Frosting

Ingredients:

  • 2 eggs
  • 1 cup sugar
  • 1/2 cup pumpkin puree
  • 1/2 cup oil
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 tsp ground ginger
  • 1/4 tsp cloves

For the Frosting:

  • 1 package cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 1 tsp vanilla extract
  • Whole pecans for decorating

Directions:

  1. Preheat oven to 350°F (175°C) and grease a baking pan.
  2. In a large bowl, mix eggs, oil, pumpkin, and sugar. Stir in flour, baking powder, baking soda, salt, ginger, cinnamon, and cloves until combined.
  3. Pour batter into the greased pan and bake for 25-27 minutes. Test with a toothpick; it should come out clean.
  4. For the frosting, beat together butter and cream cheese until smooth. Add vanilla extract, then sift in confectioners’ sugar and mix until fluffy.
  5. Once the bars are cool, spread the cream cheese frosting over the top and decorate with whole pecans if desired.
