Preacher Cake Recipe

Looking for a show-stopping dessert for guests or family? This Preacher Cake is soft, moist, and packed with flavor. Bursting with pineapple, nuts, and coconut, it’s topped with a creamy cream cheese frosting that takes it over the top. Perfect for breakfast, brunch, or dessert!

Ingredients

Cake:

  • 3 cups all-purpose flour
  • 2 tsp baking soda
  • 1 tsp salt
  • ½ tsp cinnamon
  • 2 cups sugar
  • 3 eggs
  • 1 cup vegetable oil
  • 2 tsp vanilla extract
  • 20 oz can crushed pineapple (with juice)
  • ½ cup chopped pecans or walnuts, divided
  • 1 cup flaked coconut (optional)

Cream Cheese Frosting:

  • 8 oz cream cheese, at room temperature
  • 5 tbsp butter, at room temperature
  • 1 tbsp thick whipping cream
  • 1 tsp vanilla extract
  • 1 cup powdered sugar, sifted

Instructions

  1. Preheat oven to 350°F. Spray a large 13×9-inch baking pan with oil.
  2. In a large bowl, sift together flour, baking soda, salt, and cinnamon.
  3. In a separate bowl, beat eggs, sugar, oil, and vanilla until creamy. Gradually mix in the flour mixture.
  4. Fold in pineapple (with juice), half of the chopped nuts, and coconut flakes until combined.
  5. Pour batter into prepared pan and bake for 50–60 minutes. Test for doneness by inserting a toothpick into the center—it should come out clean.
  6. For the frosting, beat cream cheese, butter, whipping cream, vanilla, and powdered sugar until smooth.
  7. Once the cake is completely cooled, spread frosting evenly on top and sprinkle with remaining chopped nuts. Refrigerate for at least 1 hour to set the glaze before serving.

Tips & Tricks:

  • Ensure the cake rises evenly by using a deep pan or dividing batter into two layers.
  • If the top browns too quickly, cover loosely with foil and continue baking.
  • For extra moistness, make sure to measure flour properly and don’t overbake.
  • The cake can be frozen: wrap tightly and store up to 5–6 months. Thaw overnight in the fridge, then add fresh frosting before serving.
