Pork Tenderloin Fried Rice Recipe

Ingredients

For the Rice:

  • 2 cups short-grain white rice
  • 2 cups water
  • 1 tbsp avocado oil (optional)

For the Stir-Fry:

  • 1 lb pork tenderloin, diced
  • 3 garlic cloves, minced
  • 2 carrots, peeled and finely diced
  • 1 small yellow onion, diced
  • 1/2 cup peas (fresh or thawed)
  • 1/4 cup green onion, sliced (mostly white, some green)
  • 2 eggs, lightly beaten
  • 5 tbsp butter, divided

To Finish:

  • 3 tbsp soy sauce (or more to taste)
  • 1 tsp toasted sesame oil
  • 1 tsp sesame seeds
  • Salt and pepper, to taste

Instructions

Step 1 – Cook and Chill the Rice

  1. Cook rice in a rice cooker, Instant Pot, or on the stovetop.
  2. Spread onto a parchment-lined baking sheet and refrigerate for at least 1 hour (or freeze for 20 minutes).

Step 2 – Prep Pork & Veggies

  1. Dice the pork into small pieces.
  2. Mince garlic, dice carrots and onion, and prepare peas and green onions.

Step 3 – Scramble the Eggs

  1. Heat 1 tbsp butter in a large pan or wok over medium heat.
  2. Add beaten eggs, stirring gently until just set. Transfer to a plate.

Step 4 – Cook Pork & Vegetables

  1. Melt 1 tbsp butter, then brown pork until nearly cooked through. Add garlic and cook 1-2 minutes. Transfer to plate.
  2. Add 1 tbsp butter and sauté carrots, onion, and peas until tender. Transfer to plate with pork.

Step 5 – Fry the Rice & Combine

  1. Melt remaining 2 tbsp butter. Spread rice in an even layer, letting it crisp slightly before stirring.
  2. Add pork, vegetables, and eggs back to the pan.
  3. Stir in soy sauce, sesame oil, sesame seeds, and green onion. Season to taste.

Step 6 – Serve
Serve hot with extra green onion sprinkled on top.
