Ingredients

  • 1 tablespoon olive oil (or avocado oil)
  • 2 garlic cloves, minced
  • 2-inch piece fresh ginger, grated
  • 1 cup uncooked white rice (Jasmine or Basmati)
  • 2 cups fresh or frozen pineapple chunks
  • 1 tablespoon sriracha (or hot sauce)
  • 1 tablespoon coconut aminos (or soy sauce)
  • 1 teaspoon coconut sugar
  • 1 teaspoon salt
  • ¼ teaspoon red pepper flakes
  • 1 ½ cups water

How to Make Pineapple Rice

1️⃣ Sauté the Aromatics

Heat oil in a saucepan over medium heat. Add garlic and ginger and sauté for about 5 minutes until fragrant.

2️⃣ Toast the Rice

Add the uncooked rice and stir for 2 minutes until slightly translucent. This step enhances flavor.

3️⃣ Add Flavor

Stir in pineapple, sriracha, coconut aminos, coconut sugar, salt, and red pepper flakes.

4️⃣ Cook

Pour in the water and bring to a boil.
Reduce heat, cover, and simmer for 15 minutes, or until liquid is fully absorbed.

5️⃣ Rest & Fluff

Remove from heat and let sit covered for 5 minutes.
Fluff with a fork before serving.

Tips for Perfect Rice

✔ Use fresh pineapple for the brightest flavor.
✔ Don’t skip toasting the rice — it makes a difference.
✔ Let the rice rest after cooking for a fluffier texture.
